I have been so busy since my husband left, but I have been snapping pictures of some of my favorite recipes on my phone to share them with you.
As I've said before, my goal is to find fun new ways to add more veggie snacks to this crazy keto lifestyle, and tomatoes are one of my favorites.
One of the biggest problems I have regarding vegetables is spoilage.
I don't know what it is about my house, but fruits and veggies start to shrivel and die as soon as they come through my door.
Well, everything except apples.
I'm not sure they are real apples because they seem to live forever.

Some of the biggest offenders are greens, berries, and tomatoes, so that's what I decided to use for my "fresh test." The strawberries only made it two days (kids), but everything else is still alive and well in my fridge.

Keto Cheesy Baked Tomatoes Ingredients:
- Italian Sausage (1 link)
- Medium Tomato
- 4 tablespoon Gouda Cheese (shredded)
How To Make Keto Cheesy Baked Tomatoes:
Set the oven to broil.

Wash and slice tomatoes into four slices and place on a baking sheet.
Remove sausage from the casing and cook in a small skillet.
Place tomatoes on a baking sheet and place in the oven for 3-4 minutes.
Drain sausage (if needed)

Divide sausage and cheese evenly between the tomato slices and place back in the oven for 3-4 minutes (until cheese is golden).
