Keto Spinach Artichoke Dip will always be my favorite dip!
Back in the day when I started slinging Pampered Chef products, I knew nothing about cooking. After a few PC parties, I was practically a professional chef. You only have to take one look at my avocado cheese dip to know I’m a culinary genius.
Obviously I’m kidding, but I did learn a lot about cooking during my little MLM business venture. I learned that I mostly hate artichokes unless they are in a dip or on a pizza.
Since you can’t dip chips, dip these instead:

Snacking Tip: If you are going to snack while watching T.V. separate your serving from the main dish. By preparing a serving size you can better track your calories and prevent mindless eating.
Keto Spinach Artichoke Dip:
I don’t care for foods that “cut” my mouth or feel sharp. In my opinion, that’s how artichokes and french cut green beans feel. I never eat those green beans but I’ve made exceptions for artichokes.
Ingredients:
Makes 8 servings
4 Net carbs/serving
1 Can artichoke hearts drained and chopped
8 oz. Frozen spinach squeezed and drained
1 Tbsp. Olive oil
2 Tbsp. Butter unsalted
2 tsp. Minced garlic
8 oz. Cream cheese
1/2 C. Gruyere cheese shredded
1/2 C. Parmesan cheese grated
8 Tbsp. Sour cream
Salt and pepper to taste
Pinch of nutmeg
Keto Spinach Artichoke Dip Directions:
1. Preheat the oven to 350 degrees.
2. Heat 1 tbsp of olive oil and two tbsp of butter in a skillet over medium-high heat.
3. Add the drained spinach and drained and chopped artichoke hearts to the heated skillet, and cook for 3 minutes.
4. Turn the heat down to medium, add in the minced garlic and cream cheese. Continue to cook and stir the mixture until the cream cheese has completely melted and blended.
5. Remove the mixture from the heat, add in 1/2 the gruyere and parmesan cheeses as well as the nutmeg, and salt and pepper to taste. Stir the mixture to combine well.
6. Place the dip mixture into a well-greased 8×8 baking dish.
7. Top with the remaining gruyere and parmesan cheese, and bake for 20-25 minutes until browned and bubbling.
8. Serve with keto-friendly dipping options like sliced cucumbers and bell peppers.
