Valentine’s Day is right around the corner, and thanks to some work I was doing on my other blog, I had the chance to put together a fun Keto Valentine’s Day Coffee Party!
I loved doing this because I think one of the hardest things about any holiday, when you live the keto lifestyle, is feeling like you’re missing out on all the sweet things.
Well, not anymore!
I will be sharing three of my recipes from the party, which include Keto Cupcakes, Keto Coffee Cake, and these delicious Keto Raspberry Valentines!
The chances are good that you will already have most of these ingredients on hand.
But you may not have a silicon heart candy tray you will want to get if you give these to your sweetheart! 😉
I used a small one because we have 6 people in this house, but you can always get a larger heart-shaped silicon tray like this and edit the serving size in MyFitnessPal!
While I didn’t try it myself (I didn’t have time), I would also love to know what these taste like dipped in chocolate, so if you try that, PLEASE let me know!
There are so many healthy low-carb options, so remember you don’t have to feel tempted to cheat; be sure to plan ahead.
I love showing my kids that we can still have fun and celebrate with foods that are fun and sweet!
Keto Raspberry Valentines:
Keto Raspberry Valentines: Ingredients
4 oz Cream Cheese
4 Tbsp Butter
1/4 Cup Coconut Oil
2 Tsp Liquid Stevia
12 Fresh Raspberries
1 Tbsp Lime Juice (optional)
Keto Raspberry Valentines: Directions
- Bring cream cheese to room temperature
- Melt butter and coconut oil and mix with cream cheese
- Add the remaining ingredients and mix well in a mixing bowl.
- Pour mixture into a silicon heart candy tray and allow to freeze for 30 min
- Serve immediately
Note: Once you freeze these, you will want to serve them asap.
If you don’t, you can always put them in the fridge, but I wouldn’t leave them for more than a day or two. By day three, they don’t taste nearly as delicious!
