We have lived in Kodiak for almost three months now and to be honest, it felt a little like fall when we got here. We went from 90 degrees every day to 52 degrees, and that was a shock.

Surprisingly we have adjusted quickly.

My son still wears shorts to school, and I haven’t needed to break out my portable heater.

Usually, I hate being cold but the weather is different in Alaska.

Maybe it’s the humidity, but it doesn’t feel cold with lower temperatures like it would in North Carolina.

The wind isn’t nearly as bad here either which can make it feel much colder than it is.

Before we moved here, I bought new winter clothes, and I couldn’t wait to start wearing them.

Now that it’s fall in Alaska I’m finally getting the chance. I don’t know about you, but I love sweater weather and everything that comes with it.

Today we are supposed to start decorating for Halloween! I love the end of the year and the snacks and treats it brings.

With that in mind, I am super excited to share these keto pumpkin pie fat bombs with you.

½ C. Monkfruit Sugar (0 net carbs)
½ C. Coconut Oil
¼ C. Pumpkin Puree
1 tsp. Pumpkin Pie Spice or Cinnamon

Cream together the softened cream cheese and monkfruit sugar until fluffy.

Add in the coconut oil, and blend until there are no lumps. Then, mix in the pumpkin puree and pumpkin pie spice.

Easy Keto Pumpkin Pie Fat Bombs

Place a rounded tablespoon of the fat bomb mixture into pumpkin molds and place in the freezer until firm.

Pop out the fat bombs, and store in the refrigerator.

You can also place the fat bomb mix in the refrigerator until firm, and then roll rounded tablespoons into balls if you do not have molds.
