I’ve decided to try something new. Every day I see a post online that talks about how annoying it is to read a blogger’s life story before getting to the recipe. With that in mind, I’ve decided that instead of sharing some personal anecdotes I’ll start sharing the info you might want to read (like info about the keto diet). What is a low carb diet?
The Ketogenic diet is a very low-carb, high-fat diet. Carbs are replaced with healthy fats, and the reduction of carbs triggers a metabolic state known as ketosis, where the body begins to use fat for energy, instead of carbohydrates obtained from food. By depriving the body of carbs, which are converted to glucose and typically used as fuel, it is forced to use its fat stores instead, literally melting it off the body when it is in ketosis.

Absolutely not, it is a lifestyle change and is not something intended as a temporary fix or a quick weight loss scheme.
What are the health benefits of a low carb diet?
Low carb eating results in weight loss, which is often quite dramatic. Studies show it also reduces risks for cardiovascular disease. Eating low carb eliminates out of control cravings, stabilizes blood sugar, and consequently the appetite. Low carb eating supports healthy blood pressure, and helps manage diabetes and can prevent the onset of type 2 diabetes. The Ketogenic diet is used to treat several types of cancer, along with traumatic brain injury, epilepsy, Parkinson’s disease, Alzheimer’s disease, and polycystic ovary syndrome.

Keto Pumpkin Spice Mug Cake Ingredients:
Recipe makes one large mug cake with two servings.
4 Net carbs/serving
For the cake:
1 Tbsp. Butter softened
2 Tbsp. Pumpkin puree
2 Tbsp. Swerve confectioner’s sugar substitute
1 tsp. Vanilla extract
1 tsp. Pumpkin pie spice
2 Tbsp. Coconut flour
1/2 tsp. Baking powder
1 Egg (beaten)
For the topping:
3 Tbsp. Heavy whipping cream
1-2 Tbsp. Swerve confectioner’s sugar substitute
Keto Pumpkin Spice Mug Cake Directions:
1. Grease the inside of two microwave-safe ramekins or mugs.
2. In a small mixing bowl, combine the softened butter, pumpkin puree, 2 tbsp Swerve sweetener, vanilla extract, pumpkin pie spice, coconut flour, and baking powder. Mix together with a fork until completely combined.
3. Add the egg into the mixture, and stir until combined well.
4. Pour the mixture evenly into the bottom of the greased ramekins or mugs.
5. Microwave the mug cakes for 90 seconds, and let cool completely.
6. While the cakes are cooling, beat together three tablespoons of heavy whipping cream and 1-2 tablespoons of Swerve sweetener until whipped cream with soft peaks is formed.
7. Turn the cakes out of their containers, and place one flat on a plate. Top with a layer of whipped cream, then the other mug cake, and another generous layer of whipped cream.
8. Sprinkle with some additional pumpkin pie spice for garnish if desired.
