Low Carb Zucchini Bread Ingredients:

Makes 10 servings
4 Net carbs/serving

  • 1 1/4 C. Almond flour
  • 1/2 C. Coconut flour
  • 3 tsp. Baking powder
  • 2 tsp. Cinnamon
  • 3/4 C. Swerve confectioners sugar substitute
  • Pinch of nutmeg
  • 2 Tbsp. Sour cream
  • 1 Stick butter softened
  • 5 Eggs
  • 1 Medium zucchini shredded
  • 1/2 C. Chopped walnuts

Gluten-Free Zucchini Bread Directions:

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, cinnamon, Swerve confectioners sugar substitute and nutmeg. Stir to combine all of the dry ingredients well.
  3. Add the softened butter and the sour cream to the mixing bowl with the dry ingredients. Begin to mix them at a medium speed.
  4. Add the eggs into the batter 1 at a time while it is mixing. Switch the mixer to a high speed, and blend the ingredients until smooth and creamy.
  5. Fold the shredded zucchini into the batter.
  6. Mix in the chopped walnuts.
  7. Pour the mixture into a well-greased loaf pan, and bake for 60 minutes, or until the top is browned and a knife comes out clean when inserted into the center of the bread.
