I don’t know about you guys, but I had never tasted Brussels sprouts until I started keto. Honestly, I didn’t eat a large variety of veggies growing up, so the produce aisle was a little overwhelming. My family is about 50/50 on the Brussels some love them while others detest them. We all agree on one thing though, they stink! It’s so funny when the kids walk in and ask about taking the trash out because I’ve just microwaved some Brussels sprouts.
I love using fresh produce but sometimes here in Kodiak; it’s safe to go with the frozen variety (and of course when they are out of season you’re probably better off that way).

Makes five servings
5 Net carbs/serving
1 lb. Brussels sprouts
4 Slices bacon chopped and cooked
1 Tbsp. Olive oil
1 tsp. Fresh rosemary
1 tsp. Fresh thyme
1/4 C. Pork rind crumbs
2 Tbsp. Parmesan cheese
Salt and pepper to taste

1. Preheat the oven to 350 degrees.
2. Trim the bottom of the brussels sprouts, and remove the outer leaves.
3. Chop the bacon slices, and cook them until crispy. Place the bacon on a paper towel-lined plate to drain.
4. Drizzle the olive oil over the brussels sprouts, and sprinkle on the thyme, rosemary as well as salt and pepper to taste. Toss to combine well.
5. Place the brussels sprouts in a shallow baking dish or on a baking sheet.
6. Pour the cooked bacon over the brussels sprouts.
7. In a small bowl, combine the pork rind crumbs with the parmesan cheese, and mix well.
