Keto Chicken Breast Pizza Crust Recipe

This keto chicken breast pizza crust recipe has been a revelation to me – most crusts made from minced chicken fall apart, crumble and need eating with a knife and fork. This takes seconds to prepare, tastes incredible and can be eaten hot or cold. You can make this a fabulous pizza night by serving this with keto cheesy garlic bread!

I first tried chicken breast pizza crust when a company reached out to me about their product. I thought it sounded amazing but the $8 per mini pizza price tag was just too expensive for my budget. Another issue I found with the store-bought version of this recipe is that the chicken is super watery. While the products they sell are extremely appetizing the watery meal doesn’t look very appealing. 

If you are still interested in trying a pre-made version I will share that info with you in a separate post because they are delicious, but nothing prepackaged will ever compare to homemade (especially the price). 

Keto Chicken Breast Pizza:

Chicken recipes on keto are great because chicken doesn’t have the fat content that beef has you have more room to work with flavors. This recipe is just a jumping point for you because of course, you can add anything you want to these pizzas to have a truly customized experience. After sharing our Keto Pizza Sauce recipe last week I have been in a pizza mood so keep your eyes peeled for all of our keto pizza recipes. 

Keto Chicken Breast Pizza Crust Ingredients:

1 chicken breast
1 tbsp olive oil
2 tsp parmesan cheese
½ tsp Italian dried herbs
Salt and pepper to taste

Pizza Toppings 

Keto Chicken Breast Pizza Crust Directions:

  1. Take your chicken breast and, using a sharp knife, slice the chicken breast through the middle (like a hot dog roll) stopping just before you slice right through. Open the chicken breast out flat so that you have one flat disc (slightly heart-shaped – see image).
  2. Place the chicken breast either in a plastic bag or between two sheets of baking parchment and using either a meat tenderizing hammer or a rolling pin, pound the chicken breast to flatten it out until it is around ¼ inch thick.
  3. Place on a baking sheet and drizzle with the olive oil. Next sprinkle it with the parmesan, herbs and add salt and pepper to taste.
  4. Bake in a pre-heated (425F) oven for approximately 8 minutes at which point flip over the chicken breast and return to the oven for a further 5 minutes.
  5. Remove from the oven and pour away any juices so that the edges of the chicken breast bake rather than broil.
  6. Add pizza sauce and your chosen toppings and return to the oven for a final 5 minutes or until the cheese is melted and golden. N.B. if using meat ingredients as toppings – you will need to ensure that they are pre-cooked as they will not have time to cook thoroughly in the time it takes the cheese to melt.
