Ingredients:
Makes 6 servings
7 Net carbs/serving
1 1/2 lbs. Lean ground beef
1/2 C. Onion chopped
1/2 C. Celery chopped
2 C. Turnips peeled and cubed
1 1/2 C. Heavy whipping cream
4 C. Chicken broth
1 tsp. Basil
1 tsp. Oregano
2 Tbsp. Butter unsalted
1/4 C. Sour cream
2 C. Shredded cheddar cheese
Salt and pepper to taste
Directions:
1. Melt the butter in a deep-sided pot or skillet on the stove over medium-high heat.
2. Add the beef, turnips, celery, and onions to the skillet with the melted butter, and cook until the meat is completely browned.
3. Add in the chicken broth, basil, oregano, and salt and pepper to taste. Bring the mixture to a boil, and cook until the turnips become tender.
4. Reduce the heat to medium, and mix in the heavy whipping cream. Cook until the soup begins to thicken.
5. Stir in the shredded cheddar and sour cream until the cheese is melted.
