10 Strips of bacon
4 oz. Cream cheese softened
3/4 C. Almond flour
3 Eggs
1 tsp. Vanilla extract
1/2 tsp. Maple extract
Keto Bacon Stuffed Pancake Strips Directions:
1. Preheat the oven to 400 degrees.
2. Place the bacon on a baking sheet lined with aluminum foil, making sure the pieces are not touching each other.
3. Bake the bacon for 15-20 minutes until it is as crispy as you would like it. Place the cooked bacon on a paper towel-lined plate to drain and crisp up.
4. In a blender, combine the cream cheese, almond flour, eggs, vanilla extract, and maple extract. Blend the mixture until smooth and creamy.
5. Heat a skillet with cooking spray in it over medium heat on the stove.
6. Place a piece of cooked bacon into the skillet, and use a spoon to carefully place a layer of the pancake batter over top of the bacon strip.
7. Let the batter cook on one side, and then flip the bacon stuffed pancake over, and cook for another minute or two on the other side until done.
8. Repeat this process with the remaining bacon strips.
9. Serve your bacon stuffed pancake strips with keto-friendly sugar-free syrup of your choosing.
