Keto Pumpkin Spice Muffins Ingredients:

Makes 9 large muffins
3 Net carbs/serving
1 C.Almond flour
1/4 C. Coconut flour
2 tsp. Baking powder
2/3 C. Swerve confectioner’s sugar substitute
1 Tbsp. Pumpkin pie spice
1/2 C. Butter softened
2/3 C. Pumpkin puree
3 Eggs beaten
1 1/2 tsp. Vanilla extract
1/4 C. Chopped pumpkin seeds for garnish
Keto Pumpkin Spice Muffins Directions:

1. Preheat the oven to 350 degrees.


2. Add the almond flour, coconut flour, baking powder, Swerve sweetener, pumpkin pie spice, softened butter, pumpkin puree, and vanilla extract to a mixing bowl. Beat the ingredients on high until they are thoroughly combined.
3. Slowly add the beaten eggs to the mixture, mixing well.
4. Place cupcake liners into the holes of a cupcake tin, and fill them almost completely full with the batter mixture.

5. Sprinkle the chopped pumpkin seeds on top of each muffin.
6. Bake the muffins or 25-30 minutes until cooked through and browned on top.

These are so good! Even my non-Keto husband loved them. I added a 1/4 cup of ground psilium husk, which made them slightly chewy and fluffy.
