4 C. Pecan halves
1 Egg white
2 tsp. Vanilla extract
½ C. Swerve brown sugar substitute
1 ½ tsp. Ground cinnamon

Preheat oven to 250
Place the egg white and the vanilla into a mixing bowl, and beat until a foam begins to form on the surface of the liquid.
Mix the Swerve sugar substitute with the cinnamon in a small bowl, and set aside.
Toss the pecan halves well in the egg-white mixture until they are thoroughly coated.
Add the sugar mixture to the mixing bowl with the pecans, and toss to coat.
Place the coated pecans in a single layer on a well-greased baking sheet.
Bake for 1 hour, stirring every 15 minutes
