Carb-free whipped cream is a go-to snack for me, and when I first started keto, it was one of the recipes that helped me beat sugar cravings.
If you are looking for great heavy whipping cream, I highly recommend using Organic Valley because it is the only zero carbs-heavy whipping cream I have found.
I'm sure there may be others, but like I said it's the only brand I've been able to find.
This carb-free whipped cream couldn't be easier to make, and it has been the base of many other recipes I will share soon.
I also love using it as a topping for this keto chocolate mousse, my mug cakes, and keto pumpkin cheesecake.
I usually make a big batch so I can use my whipped cream in various ways without having to wash my mixing bowl multiple times, but you can always cut this recipe down and make single servings.
This recipe makes about 20 servings, which is perfect for holiday parties. You do take keto recipes to holiday parties.
PLEASE READ ---> Update: There is a lot of debate about whether or not this is carb-free whipped cream.
Yes, Organic Valley, in large enough amounts, will have carbs, but this brand does appear to have fewer carbs than other brands unless they have figured out a way to skew their label.
With that said, yes, if you eat this entire batch, you are going to be eating carbs.
There is no way around that. If you only eat one serving, you will be good to go, but if you eat more than half the whipped cream, well, why would you do that?
Whipped cream isn't a meal.
Carb-Free Whipped Cream:
Ingredients:
2 Cups of Organic Valley Heavy Whipping Cream
2-4 teaspoon of Liquid Stevia or 1-2 itty bitty scoopers of Powdered Stevia (to taste)
2 teaspoon Vanilla Extract
How To Make It:
Pour all ingredients into a mixing bowl until you reach a consistency you like. I am in love with my Kitchen-Aid Mixer and use it daily.
You can store this whipped cream, but it will start to liquefy, so I recommend freezing it if you don't plan to use it quickly.
See what I mean? It doesn't get much easier than that!

I'd like to suggest chilling the bowl, whisk attachment and cream in the freezer for 15 minutes before starting.

How much is one serving though?

Am I missing a step? I put the ingredients in the bowl and began mixing. It was liquid before and it still is liquid. How do you make it whipped?
ketosizeme says
Are you mixing by hand? Without an electric mixer it would have to be a)very cold and b) you would have to use a lot of force.

Is this really carb free? It lists 0g carbs on the Organic Valley container, but that's for 1tbsp. I believe that means < 0.5g since it's rounded down. Two cups is 32tbps, so that could be a max of < 16g of carbs, or 0.8g / serving. Still, most heaving cream does list 1g, so Organic Valley does have less, I will now be looking for that brand.

It’s also the only brand I’ve found in my local stores that doesn’t have carrageenan. I have to go out of my way to buy it, but it’s worth it!

what about the alcohol content in the extract?

I use whipped cream as a go to snack and even though it may be o.5 g carbs per 100ml or whatever, if you only have 1 serving and you arnt over doing carbs anywhere else in your meals, then I think it's safe to have this product. Ketosis is dependable on 20 -50g of carbs I don't see the harm in it. And it works for me.

I would DEFINITELY recommend putting WAY less stevia in the whipped cream because it leaves a VERY sweet after taste.
