Ingredients:

For the filling:
1 lb. Ground beef
1 lb. Ground lamb
1/2 C. Onion chopped
2 C. Green beans in bite sized pieces
2 Medium zucchini chopped
1/2 C. Red cooking wine
1/2 C. Beef broth
2 Tbsp. Tomato paste
2 tsp. Rosemary
2 tsp. Oregano
2 tsp. Minced garlic
Salt and pepper to taste
For the topping:
1 Large head of cauliflower
3 oz. Cream cheese
4 Tbsp. Butter unsalted
Salt and pepper to taste
1 C. Shredded cheddar cheese
Keto Shepherd’s Pie Directions:
1. In a skillet over medium-high heat on the stove, begin to brown the ground beef and lamb.
2. Mix in the onions and zucchini, and saute until the meat is completely browned.
3. Toss in the green beans as well as salt and pepper to taste, and cook for another 2 minutes.
4. Add in the red cooking wine, and cook down until mostly reduced.
5. Mix in the tomato paste, oregano, rosemary, minced garlic and beef broth. Stir to combine well, and cook down for another 3-5 minutes.
6. Pour the meat mixture into a well greased casserole dish, and set aside.
7. While the meat mixture is cooking on the stove, place a large head of cauliflower florets to boil in a pot.
8. Boil the cauliflower until tender, and then drain thoroughly.
9. In a blender or food processor, combine the creamy cheese, butter, cauliflower and salt and pepper to taste. Blend until smooth and creamy.
10. Top the meat mixture in the casserole dish with an even layer of the pureed cauliflower.
11. Sprinkle the shredded cheese on top of the casserole, and bake for 15-20 minutes until the cheese is melted.
