I’ve noticed a lot of you try to alter almond flour recipes with coconut flour which can be tricky as the conversions are not the same.
That’s why I decided to try to include more coconut flour recipes here on the blog.

I have to tell you that I am on a bit of an instant coffee kick right now.
It reminds me of my grandmother.
Growing up my Nanny as we called her always heated her water in a percolator, and then made the most amazing cup of instant coffee I have ever had.
Her coffee was better than Starbucks, and she had seriously rusty water.
I’m guessing it was her love for coffee and sitting around the table chatting that made her coffee so stinking good.
She was a country cook so I could have probably never gotten her to eat these donuts, even though they are amazing.

I eat two snacks a day, and I love baked snacks because I can prep them before a super busy week.
Who am I kidding? Every week is busy around here these days.
The great thing about these keto coconut mocha donuts is that they aren’t loaded with fat, calories, or protein which makes them great for those days when you’re still hungry but don’t have many macros left to work with.
Of course, they are low carb, so you don’t have to worry about that!
Keto Coconut Mocha Donuts Ingredients:
1/3 cup coconut flour
4 eggs
1/4 cup coconut oil
3 Tbsp unsweetened cocoa powder
1 Tbsp liquid stevia
1/3 cup unsweetened almond milk (or coconut milk)
1/2 tsp instant coffee granules
1/2 tsp baking powder
1/2 tsp baking soda
How To Make Keto Coconut Mocha Donuts:
Preheat the oven to 350.
Add all ingredients to a mixing bowl and mix well.
Pour mix into a donut pan and bake for 20 minutes.
Place on a cooling rack and allow to cool.
Serve and enjoy! Goes great with a big mug of coffee or non-daily milk!

These low carb donuts were modeled after my favorite coffee and they make a magical pairing!
Ingredients
- 1/3 cup coconut flour

I dont have instant granules. Can I sub some of the almond milk with expresso?

Is there anything I can substitute the instant coffee with? I don't have coffee not do I drink it. I really don't want to buy it just to make these. Please and thank you.

Any replacement suggestion for liquid stevia?

You could use any sugar alcohol. I'm not sure how much you'd need but you can do it to taste. You could also use Splenda just make sure to adjust the nutritional values.
