Keto Cauliflower Mac and Cheese is going to change the way you view cauliflower, forever!
Much like our keto sausage balls, this recipe reminds me of my amazing mother-in-law.
Mac and Cheese was her specialty! Every holiday we could count on her to spend hours preparing the best mac n cheese I’ve ever eaten (like this).
Today’s recipe is perfect for those of us who have adopted a keto lifestyle!

Ingredients:
Makes 5 servings

- 1 Medium head of cauliflower cut into florets
- 2/3 Heavy whipping cream
- 3 oz. Cream cheese
- 1 C. shredded cheddar cheese
- 1/2 C. Shredded mozzarella cheese
- 5 Strips of bacon cooked and crumbled
- 1 tsp. Garlic powder
- 1 tsp. Basil
- 1/2 tsp. Paprika
- Pinch nutmeg
- 1/4 C. Parmesan cheese
- 1/2 C. Crushed pork rind crumbs
- Salt and pepper to taste

1. Put the cauliflower florets in water in a pot over medium-high heat. Bring to a boil for 5 minutes, and then drain.
2. Cook the bacon until crispy, crumble and set it aside for later.
3. In a pot over medium heat, add the cream cheese, heavy whipping cream, paprika, garlic powder, basil and a pinch of nutmeg. Stir until the cheese is melted and the mixture is smooth.
4. Add the cauliflower back into the pot with the cream mixture, toss to coat.
5. Mix in the cheddar cheese, mozzarella cheese, and the crumbled bacon.
6. Add salt and pepper to taste.
7. Pour the cauliflower mixture into a well-greased 9×9 baking dish.
8. Top the mixture with the crushed pork rind crumbs and parmesan cheese.
9. Bake the cauliflower mac and cheese in a 400 degree preheated oven for 20-30 minutes until browned and bubbling.
