It’s beginning to look a lot like Christmas and I have been busy in the kitchen planning for the holidays!

Yesterday I was in the kitchen all day working on a holiday cookie platter in preparation for upcoming holiday cookie swaps and get-togethers.

I love most keto foods equally, but baking and party foods have always been my passion.

I love preheating the oven first thing in the morning and baking all day.

It reminds me of the baking days I shared with my mom before Christmas.

We would spend all day together cooking up a storm, and I will never forget those days.

I also want to pass those memories down to my own children.

One of our favorite recipes was always Snickerdoodle Cookie Dough Balls.

Though they sound like they would be raw cookie dough balls, they are cooked.

I try to bake anything that has eggs in it unless, of course, it’s eggnog!

I always try to make my cookies the same size, so I usually form a square and have been known to measure it with a ruler to make my lines!

Once you have your balls formed, don’t forget to roll them in the cinnamon and sugar mixture!

Low carb snickerdoodles? Yes please! I love that these cookies add a cool new look to your holiday cookie swap. Similar to cake balls, I present cookies balls! Yum

Prep Time 5 minutes
Cook Time 12 minutes
Total Time 17 minutes

Ingredients

  • 4 Tbsp Butter
  • 1 Large Egg
  • 1 1/2 Cups Almond Flour
  • 1/4 Cup Stevia + 1/8 Cup Stevia (in a small bowl)
  • 6 Drops of Liquid Stevia
  • 1/2 Tsp Vanilla
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Cream of Tartar
  • 1/4 Tsp Cinnamon (in a small bowl)

Instructions

  1. Preheat oven to 350
  2. Add 1/8 cup or Stevia and 1/4 tsp of cinnamon to a small bowl and set aside.
  3. Pour remaining ingredients in a mixing bowl and mix until well combined
  4. Remove dough from bowl and shape into 12 balls
  5. Roll balls to coat in cinnamon sugar mixture
  6. Bake for 10-15 minutes (check with a toothpick)
  7. Serve and enjoy!

I didn't have the stevia in powdered form, so I substituted 1:1 with Swerve confectioners blend for the cookies and Swerve granular for the cinnamon coating mixture. Mine also didn't stay in ball form, they look like little mound cookies, but do taste great. Not quite like old-fashioned snickerdoodle cookies, but definitely tastely and hopefully enough to curb my sweet tooth!

made these today, completely omitting cream of tarter (only because I didn't have it and the urge to make them was too strong to wait for a trip to the store) and they turned out so great! delicious! they did crack (tops have 2 or 3 big cracks across them) while baking maybe due to my laziness in procuring cream of tartar, and i didn't roll them in sugar, again, so lazy - but the end result was so perfect!

I just had my first go at these delightful cookies and mine didn't stay in ball form. I'm wondering if I was suppose to use a different type of almond flour? I used unblanched almond flour/meal and my dough was very wet. Any ideas? I'm hoping they still come out tasty

Kayla-I'm having the same problem. The first batch stayed in balls, but after that every batch has flattened out into cookie form. It may be the super fine almond flour I switched to. I hope we hear back from ketosizeme!
