As I’ve said before, my goal is to find fun new ways to add more veggie snacks to this crazy keto lifestyle, and tomatoes are one of my favorites.

One of the biggest problems I have regarding vegetables is spoilage.

I don’t know what it is about my house, but fruits and veggies start to shrivel and die as soon as they come through my door.

Well, everything except apples.

Keto Cheesy Baked Tomatoes Recipe - So Easy!

Keto Cheesy Baked Tomatoes Ingredients:

  • Italian Sausage (1 link)
  • Medium Tomato
  • 4 Tbsp Gouda Cheese (shredded)

How To Make Keto Cheesy Baked Tomatoes:

Set the oven to broil.

Wash and slice tomatoes into four slices and place on a baking sheet.
Remove sausage from the casing and cook in a small skillet.
Place tomatoes on a baking sheet and place in the oven for 3-4 minutes.
Drain sausage (if needed)


Divide sausage and cheese evenly between the tomato slices and place back in the oven for 3-4 minutes (until cheese is golden).

I like making sandwich tacos using lettuce leaves instead of bread. The head of lettuce last two days at its best. The grocery sprays too much water into the heads. This is so irritating and wasteful! So I would use this for my lettuce 'bread'.
