I am so stinkin’ excited that we are getting so close to the holidays!

When I think about the holidays, the first thing I think of is family, and the second is FOOD!

Don’t take this the wrong way, but the food is super important during the holidays.

Every culture has some food/meal and holiday ritual.

Of course, we as a nation struggle with our addiction and relationship to food so I never want to glorify food in an unhealthy way, but I do believe that food is an important part of our cultures and families.

My goal has always been to take the meals and foods we love and make them love us back.

We shouldn’t be fighting with our food (obesity, heart attacks, diabetes) we should be embracing the art of restoring food’s ultimate purpose, which is to fuel our bodies and make us a little happy (but only on the holidays).

😉 I kid, I kid.

You see, this is my struggle.

Balancing the love and respect I have for food with the feelings I experience when I eat delicious meals.

When we clean up our kitchens and start shopping smart, the two balance themselves.

That’s the most surprising thing about living the keto lifestyle.

You aren’t hungry anymore.

You may have cravings sometimes, but you should only be eating when you’re hungry at this point (unless, of course, you just started).

I believe that when we provide the proper fuel for these vessels, they will cut you some slack in the cravings area.

So that’s how I get waaaaaayyyyy off track.

I forgot the whole reason I started writing this post, and that was so I can share my love of all things mascarpone; okay, well, actually, just my latest mascarpone recipe, but you know what I mean.

I was going to share a recipe that uses mascarpone, which made me think of the holidays, which made me think of unhealthy relationships with food.

Blackberry Mascarpone Cheese Fat Bomb

Blackberry Mascarpone Fat Bombs: Ingredients

1/2 Cup Blackberries (No Sugar Added)
2 Tbsp Mascarpone Cheese
1 Cup Coconut Oil
1 Cup Coconut Butter=
1/4 tsp Vanilla Extract
1/2 tsp Lemon juice
1/2 tsp Liquid Stevia

Blackberry Mascarpone Fat Bombs: Directions

Start by thawing blackberries in a small bowl

Once your blackberries are thawed place mascarpone cheese, coconut oil, coconut butter, vanilla extract, lemon juice, and liquid stevia in a mixing bowl and mix on low until everything is combined well. The smoother, the better
Spoon into a silicone cupcake liner
Freeze for 30 minutes and keep refrigerated

Here are a few tips when it comes to making fat bombs:

Only you know your macros. If one serving of a fat bomb is too much for you, cut it in half or make double the servings.

Instead of making 9 fat bombs, you would make 18 using the same ingredients.

It’s easier to plan, so you don’t sabotage yourself.

Use measuring spoons to dish out anything you make.

This helps keep everything equal. When you dish your fat bomb mix into the silicone baking cups, you want to ensure each one has exactly the same amount in it.

When tracking your daily fat intake, you need to know exactly what you’re getting.

I use different ingredients than you.

Even though I have the nutrition facts listed for you, you should still add a new recipe to MyFitnessPal every time you make something.

It’s so straightforward.

All you have to do is go to Add Recipe – Then enter the link from the blog post you are copying.

These blackberry mascarpone cheese fat bombs have a mild and creamy feel that will melt in your mouth. These are easy to make and will satisfy even the fanciest sweet tooth! We have a variety of fat bomb recipes for everyone but this seems to be a fan favorite.

Ingredients

  • 1/2 Cup Blackberries (No Sugar Added)
  • 2 Tbsp Mascarpone Cheese
  • 1 Cup Coconut Oil
  • 1 Cup Coconut Butter
  • 1/4 tsp Vanilla extract
  • 1/2 tsp Lemon juice
  • 1/2 tsp Liquid Stevia
